There’s always time for a snack

Hey guys, thanks for stopping by, I hope you have a few moments to grab a drink, take a sit down & spend some time for you, with me.

I wanted to start this blog as a way of sharing my journey of wellbeing, findings ways to be the best version of me.  I wanted a chance to share things that might not sit with my ‘work’ blog, so I have the chance to share a more personal side, including my thoughts, renovation ideas & anything else that makes me tick.

For the minute I will leave you with my go to ‘pick me up’; matcha latte with chick-pea brownies.

Matcha Latte

The key here is enjoy preparing it.  Get a fancy bowl, a wisk & take the time to enjoy the process. Take a scoop of matcha powder, make into some paste with some hot water by whisking with a bamboo whisk, then add a squeeze of honey & slowly whisk in some warm oat milk until frothy and delicious.  Serve with…

Chickpea Brownies

My favourite snack! I strongly believe in creating the most nutritious version of anything, even a snack.  I love to know what is in my food, so I like to cook from scratch and experiment. One day I will write a recipe book but often I respond to taste, so it will vary depending on what is in my fridge, how I am feeling & what I am doing (e.g. long runs/rest weeks).

These are so easy to make, simply mix:

  • 2 tins of drained chickpeas
  • 1 tin of coconut milk (not the light stuff as you only want the paste, you can drink the water bit in a smoothie!)
  • pinch salt (optional)
  • scoop of peanut butter (I use Whole Earth or Meridian)
  • Teaspoon vanilla extract
  • Either a handful dates/few spoons of maple syrup
  • (I am deliberately vague as we all have personal taste and you can have a taste of this and adjust before you cook)
  • Blend then add some dark chocolate chips or raisins

Bake in the oven in a grease-proof paper lined baking tray until slightly brown, it may seem quite soft so wait to cool then place in fridge before cutting into squares and serving… et voila!

No close your computer/switch off your phone and take a few deep breaths and enjoy the quiet time.
